Vegan Spinach Artichoke Pasta w/ Crispy Fried Shallots 🌱✨

Ok it’s time to talk about how much I love artichokes. They are THE BEST. I swear I could eat a whole can. Just as a snack.

This spinach artichoke pasta is one of my favorite ways to enjoy artichokes. It’s rich and creamy, made with silken tofu, miso and nutritional yeast for extra cheesy umami goodness. Also those crispy fried shallots… so good. Plus there’s a crazy amount of spinach that basically disappears once it hits the skillet to its packed with nutrients! Nut free, plant based and on the table in under 30 minutes!


16 oz silken tofu
2 tbsp olive oil
1 large shallot, sliced
2 garlic cloves, sliced
2 tbsp miso
1 tbsp soy sauce
3 tbsp nutritional yeast
8 oz baby spinach
2 15 oz cans artichoke hearts, drained and coarsely chopped
12 oz short cut pasta
Fresh lemon juice for serving

  1. The silken tofu is not mentioned in the directions, but I’m assuming it goes in the processor with garlic/shallot, miso, soy, etc? 🙂

  2. Argh! I just cooked this but you have missed adding the tofu to your method on your website. I didn’t realise until I have served it up and don’t know where I was supposed to use it? New to using tofu. Wasn’t creamy without it.
