Vegan Pinto Bean Tortilla Soup 🌱

I always get so excited to photograph Mexican inspired food because the colors and textures are always so beautiful! Not to mention delicious, I mean you can’t go wrong with avocado and crispy tortillas πŸ™‚

This tortilla soup is warm and hearty, made with pinto beans, fire roasted tomatoes, peppers and topped off with crispy oven baked tortilla strips. The soup itself is super simple, and comes together in about half an hour!

Ingredients:

1 lb dried pinto beans, soaked overnight*
1 large yellow onion, diced
2 tbsp oil
2 green bell peppers, chopped
2 garlic cloves, pressed
1 28 oz can fire roasted tomatoes
2 chilies in adobo, chopped + 1 tbsp sauce
1 tsp paprika
2 tsp chili powder
1 tsp cumin
4 cups vegetable broth
1 tsp salt + more to taste
