Vegan Mini Cheesecakes✨

It was so hard to find a recipe for vegan cheesecake that was also nut free…
I decided to kind of make up my own recipe using silken tofu, Daiya cream cheese and maple syrup. The base is just pumpkin seeds, dates and about a tbsp of Earth Balance.
I put them in the freezer overnight which was a mistake. They were rock hard so I let them thaw for a couple hours in the fridge before removing them from the muffin tin.
Overall, the flavor was really good, especially the base, only downside is they melt really fast. There were a few casualties during the photo shoot. 😂
