Vegan Mini Apple Pies! 🍎✨
These were so fun to make and surprisingly easy! I recommend using a pre made pie crust (I used the Immaculate Baking brand). It just makes everything easier, but if you want to make your own, go for it!

• Ingredients •
2 cups apples diced small (about 4 apples, I like Granny Smith)
1/4 cup granulated sugar
1 tbsp cornstarch
1 tbsp lemon juice
1/2 tsp cinnamon
1/4 tsp nutmeg
1 vegan pie crust recipe (pre made or homemade)
Coconut oil for brushing
Preheat the oven to 400 F
In a large bowl, combine apples, sugar, cornstarch, lemon and spices. Set aside.
Roll out half your pie dough to about 1/4 inch thick and cut as many circles as you can using a 4 inch cookie cutter or a glass, bowl etc (I used a glass container). You might need to re roll the dough as you go. Press the circles in a lightly greased muffin tin, making sure there are no air pockets underneath.
Fill each muffin cup with about 3 tbsp of filling. It will cook down so make sure it’s really packed in there.
With the remaining dough, cut out strips to make a lattice or just another circle to cover the top. Place each one over the apple filling, pinching the sides to seal. If you decided to do a circle crust on top (not lattice) create slashes in the center before baking. Brush with coconut oil and bake for about 20 min or until golden brown.
Serve with vanilla ice cream!
