Vegan Lemon Blueberry Cheesecake Bars 🍋✨

Nothing gets me more excited about summer than a good blueberry dessert on a Monday😛

These lemon blueberry cheesecake bars are pretty fabulous. They’ve got a creamy tofu based lemon cheesecake filling, a sweet blueberry topping and buttery graham cracker crust. Not too sweet and made with simple ingredients, the hardest part is honestly just waiting for them to chill before devouring them!

Here’s what you’ll need:
6 oz fresh or frozen blueberries
12 graham cracker sheets
6 tbsp vegan butter, melted
2 tbsp all purpose flour
1 14 oz block extra firm tofu, drained
8 oz vegan cream cheese
3/4 cup granulated sugar
1/4 cup lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
