Vegan Japanese Sweet Potato Cake w/ Chocolate Ganache 🍠✨
If you have never had a Japanese sweet potato, what have you been doing!? They’re the weird looking ones with the purple skin and the white inside that I didn’t try for years because I didn’t think they could ever live up to a classic orange sweet potato. I was WRONG. The flesh is sweeter and creamier, when baked the it caramelizas and turns this golden color. Straight out of the oven and they almost tastes like a dense, fudgy slice of cake!
After years of eating these guys baked with a spoon full of chocolate seed buttter (my version of Nutella) I decided to start developing a recipe for an actual Japanese sweet potato cake! It’s still in the works, this was the first iteration. Turned out a little dense, but tasted great! I’ll post the recipe on the blog after a few more tweakes!
