Vegan Herbed Ricotta Grilled Cheese 🌱✨

Back with yet another fabulous recipe involving carbs and tomatoes🙂

This vegan grilled cheese is so good, so summery and pretty easy to pull together! Layered with my favorite tofu ricotta, tons of fresh herbs, some heirloom tomatoes if you got them and of course a few thick slices of sourdough. Cooked in probably a little too much olive oil (but does that exist?) until golden brown and crisp. 😍

And random bonus: I recently tried the herbed ricotta as a dip for triscuits— 10/10 would recommend 👌🏼

Here’s what you’ll need:
– extra firm tofu
– olive oil
– lemon juice
– nutritional yeast
– miso paste
– fresh herbs (basil, parsley, oregano and/or mint)
– heirloom tomatoes
– sourdough bread
