Vegan Cookie Dough Cupcakes!✨🍪

I’m usually not a huge cupcake person, because why eat a mini cake when you can eat a big cake?? However, I may have just been converted with these decadent cookie dough cupcakes! And they’re VEGAN! So no need to worry about eating raw egg🙂

1. Start by baking a batch of 12 chocolate cupcakes (I recommend postpunkkitchen’s recipe, but cut down the sugar by 1/4 cup)

2. Make the cookie dough by creaming butter and sugar together, ed by dry ingredients, syrup and milk. Fold in choco chips

1 cup all purpose flour (heat treated if you want)
1/2 cup vegan butter (I like earth balance)
1/2 cup brown sugar
2 tbsp dairy free milk
1 tbsp maple syrup

3. Make the frosting
I used minimalistbaker’s recipe and added 1/4 cup of sunbutter (sub any nut/seed butter) and it went really well with the chocolate. Make sure to refrigerate before use.

4. Assemble!
This is the fun part, cut on an angle with a paring knife to take out the middle of each cupcake. Don’t eat the centers, I know it sucks. Spoon in about 2 tbsp of cookie dough then pressing the tops back into place. Let sit in the fridge for half an hour before piping. Top with mini chocolate chips and then figure out how to burn off those 700 calories you just ate eating all the leftover cookie dough😀
