Vegan Chickpea Flour Omelette! 🍳

The base for this recipe is so easy, just two ingredients! I love trying different fillings, yesterday was avocado and arugula. Try adding some vegan cheese, caramelized onions, sautéed mushrooms or roasted cherry tomatoes🙂


Ingredients (for one serving):
2/3 cup chickpea flour
2/3 cup water
1 tsp olive oil
big pinch of salt


Whisk together chickpea flour, water and salt until no clumps remain. Let soak for 1 hour to overnight.
Heat a non stick skillet over medium heat then add in your batter, rotating the pan so it costs the bottom. Cover with a pot lid or some aluminum foil and cook until the top has firmed up. Slide onto a plate, fill with desired toppings and enjoy!
