Vegan Broccoli Cheddar Soup w/ Pretzel Bread Croutons ✨🥨

Just because the weathers warming up, it doesn’t mean I’m going to stop eating all the cozy soups☺️

This vegan broccoli cheddar soup is probably one of my most favorite recipes I’ve made recently. It’s also the reason the roof of my mouth has been burned for the past few days since I have zero patience when it comes to good food😂

Rich, creamy and super cheesy the craziest part is that this soup is pretty much made entirely out of vegetables?! Sunflower seeds and potato add a nice creaminess while also keeping things nut free. Topped with those addictive pretzel bread croutons… yum😍

Here’s what you’ll need for the soup: 1 cup sunflower seeds (hulled)
1 small yellow onion, chopped
2 small carrots, peeled and chopped
2 celery ribs, chopped
1 garlic clove, sliced
1 russet potato, peeled and cubed into 1/2 inch pieces
4-5 cups unsalted vegetable broth
1/2 cup nutritional yeast
2 tbsp soy sauce
1 tsp salt
1 large broccoli head
1 1/2 tbsp apple cider vinegar
