I think my new favorite thing is veganizing Italian comfort foods 😁

This vegan baked rigatoni Bolognese was honestly just the perfect cozy dinner I needed between all the summer salads and grilling. The umami packed Bolognese sauce is made with a blend of toasted pumpkin seeds, mushrooms and tofu plus a ton of yummy Italian spices. Ladled onto hearty rigatoni noodles and baked in the oven until warm and crispy on top.

Extra points if you make my stretchy vegan mozzarella cheese. This stuff is so good—Much better than store bought vegan cheese in my opinion. It also melts and browns like a dream, so perfect for this pasta dish!

Here’s what you’ll need for the baked rigatoni:
– Rigatoni, uncooked
– Cremini mushrooms
– Raw pumpkin seeds
– Soy sauce
– Extra firm tofu
– Italian seasoning
– Smoked paprika
– Fennel seed
– Chopped tomatoes
