Ultimate Roasting Pan Ragú 🌱✨
Sharing another fabulous recipe from ottolenghi’s cookbook, Flavor! This one has all that vegan umami goodness with lentils, three types of mushrooms, soy sauce and miso. Instead of chopping everything by hand, the vegetables are blitzed in a food processor and then roasted for 90 minutes.
It’s kind of a strange flavor combo with cumin, harissa and coconut cream, but it WORKS. If you guys try this one out, make sure you let it sit for at least 15 minutes once it comes out of the oven to let all the flavors meld together.
