Twice Baked Maple Tahini Sweet Potatoes 🌱✨
I’m convinced that the only thing better than a baked sweet potato is a TWICE baked sweet potato. These ones are my new favorite, they’re creamy on the inside, crisp on the outside and of course, topped with chickpeas! They’re super simple, easy to make and vegan!
4 medium sweet potatoes, halved lengthwise
1/2 cup tahini
2 tbsp maple syrup
2 tbsp soy sauce
Juice and zest from 1 lime
1 28 oz can chickpeas, drained and rinsed
2 tbsp oil (divided)
1 tsp garlic powder
1/2 tsp salt
Sesame seeds, cilantro and scallions for garnish
