Attempt making shakshuka with chickpeas as an alternative of eggs! I used a primary recipe from nytcooking for the sauce then added one 28 ozcan of chickpeas (drained and rinsed). Simply simmer over medium low warmth for 15-20 minutes and serve with roasted potatoes or crusty bread and vegan feta cheese for the proper weeknight meal!
