Poblano Pumpkin Seed Enchiladas ✨🌱

I think we should all be able to agree all Mondays should include enchiladas.😁

Its been a while, so I seriously forgot how much I love enchiladas! There’s something about the way the tortillas soak up the sauce on the bottom but still stay nice and crisp on top, also melted cheese just makes everything better. Getting hungry just thinking about it…

These pumpkin seed enchiladas are my twist on the traditional Mexican “empipianadas.” The pumpkin seeds are blended up into a creamy rich sauce which goes perfectly over warm tortillas filled with a poblanos and spiced black beans. Top it off with some avocado and toasted pumpkin seeds for a delicious meatless meal.

I made mine vegan by using dairy free cheese, but even meat-eaters will love this one!
