Anyone looking for a simple, flavor packed pasta dish to make tonight, I’ve got you. Lemony toasted orzo with spicy black pepper, green olives and topped with crunchy chickpeas. Vegan and pretty easy to make on any night of the week!

Ingredients:
14 oz can chickpeas, drained and rinsed
1/4 cup olive oil, divided
1/2 tsp rosemary
3/4 tsp oregano
4 garlic cloves, thinly sliced
1 1/4 cup orzo, dry
3 cups vegetable broth
1 tsp sugar or honey
3/4 tsp salt
1 lemon peel
Juice and zest from 1 lemon
1/3 cup pitted green olives
Freshly ground black pepper
Chopped parsley + feta (vegan if needed) for serving
