Moroccan Spiced Lentil Burgers with Herb Smashed Avocado 🥑

So I know that “veggie burger” might strike fear in the hearts of many… I get it, they kind of get a bad reputation. I have definitely had some bad experiences myself, but I’m here to tell that veggie burgers DON’T HAVE TO SUCK. I think a lot of people go in thinking that veggie burgers are somehow the “vegan version” of a hamburger and are obviously disappointed because they a mouthful of plants instead of cow. But guys, plants can be sooo good when you’re not trying to turn them into meat!

And the thing is, I’m not vegan. I enjoy a good hamburger once in while. However, I may just prefer these Moroccan spiced lentil burgers simply because they’re more of an everyday thing, and to be honest, a lot more flavorful. They’re loaded with lots of simple, healthy ingredients and come together pretty quick. Sandwiched between a toasted sesame bun and topped with creamy herb smashed avocado, it’s a meal both meat eaters and vegans will enjoy!

Here’s what you’ll need for the burgers:
1/2 small yellow onion, diced
2 garlic cloves, coarsely chopped
8 oz cremini mushrooms, sliced
2 tsp Ras el Hanout (Moroccan spice blend)
2 tbsp olive oil + more for brushing
1 heaping cup rolled oats
1 1/4 cup cooked brown lentils*
1 1/2 tbsp soy sauce
1/3 cup pitted green olives
4-5 sesame burger buns, sliced and toasted
