Mini Cast Iron Skillet Crisps 🍊✨
These were so cute and easy to make! Each crisp was the perfect serving size for one person. I had locally grown peaches and blueberries sitting in my freezer but fresh fruit works just fine.
• Ingredients •
(for one crisp)
1 1/2 cups sliced peaches or blueberries
2 tsp granulated sugar
1/3 cup oats
1/4 cup flour
1 tbsp brown sugar
1 tsp corn starch
3 tbsp butter (I use Earth Balance for dairy free)
1/2 tsp cinnamon
1 tsp lemon zest (I find this works best if using blueberries)
Mix flour, oats, brown sugar and cinnamon in a small bowl. Then add in butter one tbsp at a time incorporating with a fork until the mixture resembles a crumble.
In another bowl, combine fruit, granulated sugar, cornstarch and lemon zest (if using) in a bowl before spooning into the skillets.
Top the fruit with the crumble and place on a sheet pan (it will probably bubble over).
Bake at 375 F for about 25-35 minutes depending on if fruit was frozen. Top with vanilla ice cream and enjoy!
