Mediterranean Tofu Scramble
This is probably my favorite way to enjoy a block of tofu! It doesn’t involve pressing or marinating, I was able to make this for lunch in leas than 20 min!
• Ingredients •
(For 2 servings)
1 block extra firm tofu
1 chopped red bell pepper
1/2 diced yellow onion
2 tbsp nutritional yeast
1/2 tsp oregano
Heat about 2 tsp of olive oil in a non stick pan then sautée onion until translucent. Add in pepper and cook for another 3-4 min or until soft.
Using your hands or a fork, crumble the tofu and add it to the pan along with nutritional yeast, oregano and a pinch of salt. Continue to cook until heated through.
I like serving this with roasted potatoes or a nice piece of sourdough.
