I am a huge fan of the cilantro lime rice at chipotle (and just Chipotle in general) so today I have some Cilantro Lime Rice and Black Bean Stuffed Peppers for you guys!

Long recipe title, but pretty simple, flavorful ingredients with black beans, fluffy white or brown rice, freshly squeezed lime juice and roasted red peppers. Plus, don’t forget to top it all off with some guac!

Ready in less than 45 minutes, vegan and gluten free!

Here’s what you’ll need:
– olive oil
– yellow onion & garlic
– jalapeño
– cumin & oregano (Mexican is best)
– cilantro
– lime juice
– canned black beans
– red bell peppers
– guac and pico de gallo for serving (optional—but not really)
