Homemade Nut Free Granola

As a granola lover with a nut allergy, it can be hard to find brands that are 100% nut free and made in a allergy friendly facility. Luckily, it’s super easy to make your own! I adapted this recipe from Bob’s Red Mill Buckwheat Granola. Even if you don’t have any allergies, this stuff is so delicious and addicting…😍

• Ingredients •
2 cups rolled oats
1 1/2 cups buckwheat groats
3/4 cup pumpkin seeds
3/4 cup sunflower seeds
2 tbsp sesame seeds
1/2 cup shredded coconut
1/4 cup coconut oil
1/2 cup maple syrup
1/2 cup honey
1 tsp vanilla extract
1 tsp salt
1 tsp cinnamon

Preheat oven to 300 F
Combine seeds, buckwheat, oats, coconut shreds, sesame seeds, salt and cinnamon in a large bowl.
In a small sauce pan, heat oil, maple syrup and honey. Simmer for a couple minutes then pour over the dry mixture.
Thinly spread over one or two sheet pans (I like to use parchment paper) and bake for 25-30 min or until golden brown. It won’t be crunchy until after it cools, so don’t over bake.
Allow to cool, then break into bite size bits—or don’t because the giant chunks are the best 😁
