Herbed Olive Oil Parathas 🌱✨

It’s Friday! How about we celebrate with some crazy good parathas? First of all if you’ve never had or made these flaky little flatbreads, that’s truly tragic. Just picture layers of flaky, buttery dough pan fried in a hot griddle until crispy. I don’t know if you guys watched my stories the other day, but if you had the sound on you know what I’m talking about. I mean, you could HEAR just how crisp and flaky those layers were 😍

These herbed olive oil parathas are a riff on the traditional made with herb infused olive oil instead of ghee so they’re vegan! Also so delicious and fun to make!

Ingredients:

1 cup olive oil
1 bunch mixed herbs (cilantro, parsley and/or mint)
4 garlic cloves
3 cups all purpose flour
2 tsp salt
1 tbsp sugar
2 tbsp herb infused olive oil
1 cup warm water
Chopped herbs
Oil for pan frying
