Harrissa Tofu Scramble✨🌱
I think today’s going to be a good day. And it may or may not have to do with the fact that I happen to have a two hour lunch break between zooms today and the leftovers of this amazing scramble all to myself. 😎
Probably the simplest recipe in ottolenghi‘s, “Simple,” but still so good!! Only three ingredients, this was the perfect lazy Sunday meal! The recipe says to use silken tofu, but in my experience, extra firm just works better for scrambles. I’ve found that silken can kind of … melt?
• Ingredients •
1 block extra firm tofu, pressed
1 tbsp rose Harrissa
1 large onion, thinly sliced
1 tbsp olive oil
Instructions: heat olive oil in a large skillet over medium heat until shimmering, add onions and a good pinch of salt. Cook for about 10-15 minutes or until caramelized, stirring frequently. Next, crumble in your tofu and add the Harrissa. Continue to cook until tofu is warmed through then serve with crusty bread and avocado!
