Grilled Vegetable Sandwich with Herbed Sunflower Ricotta ✨🌱

I don’t know what’s going on with this Chicago weather because it was a whopping 80 degrees yesterday and now it’s like 40?!😬 Really killing my summer vibes here, but you know I really just couldn’t wait to share this awesome veggie sandwich.

It’s got al sorts of smoky grilled veggies, a super creamy vegan ricotta made from sunflower seeds and sun dried tomatoes, because what’s a sandwich without sun dried tomatoes? All layered on top of of crusty toasted ciabatta bread. So good—and pretty darn healthy as far as sandwiches go.

Ingredients:

For the Sunflower Ricotta:
1 cup raw sunflower seeds
1/4 cup coconut cream
2 tbsp miso paste
1 1/2 tbsp nutritional yeast
2 tsp lemon juice
Pinch of salt
1/2 cup chopped dill, parsley and/or mint

For the Sandwich
2 large zucchinis, sliced lengthwise
1 red bell pepper, sliced
1 large red onion, sliced
1/4 cup olive oil
1 tsp oregano
1 tsp salt
1/3 cup sun-dried tomatoes
1 ciabatta loaf or other sturdy bread, sliced lengthwise and toasted
Basil for serving
