Farro and Melon Salad with Prosciutto ✨

Today I’ve got for you what is probably the least boring salad ever😋

This Melon and Farro salad is such a delicious combination of flavors and textures with hearty farro, toasted seeds and sweet summer cantaloupe. (Melon baller is a plus!). All tossed with a quick white balsamic dressing and served with cured prosciutto for the ultimate savory sweet combo.

Sounds super fancy, I know, but this salad is actually super easy to make. The hardest part is not eating all those melon balls before they go in the salad!

Here’s what you’ll need—
– cooked farro
– pumpkin & sunflower seeds
– cantaloupe
– sugar snap peas
– arugula
– prosciutto
– white balsamic vinegar
– olive oil
– thyme
– honey
– dijon mustard
– feta (optional)
