Fall Fig Bowls ✨🍁

Thought I’d start my favorite season of the year with this wholesome vegan bowl!
I tried making a vegan Chèvre and it was AMAZING. So easy, just pulsed an extra firm block of tofu with 1.5 tbsp white miso, lemon juice, tbsp olive oil and a pinch of salt. I rolled it in plastic wrap to get that log shape and put it in the freezer to firm up up a bit before baking for about 20ish minutes! The texture was spot on, a few hours in the refrigerator and it was crumbly but still spreadable!

– Roasted butternut squash with balsamic vinegar, olive oil, thyme and salt.
– rosemary sautéed chickpeas
– vegan tofu chèvre
– farro, chopped kale, fresh figs
