Creamy Miso Butter Pasta w/ Sweet Corn🌽✨
Happy Monday! Hope everyone had a great weekend! I’m headed to Boston for few days so I might take a little break from posting (or maybe not we’ll see lol) If anyone has any restaurant recommendations or tips I’d love to hear them!
Anyway, onto pasta… this miso butter pasta is just such a delicious combination of salty and sweet with fresh summer corn and savory white miso. The pasta gets cooked separately then added back into this creamy coconut corn purée with a little bit of that starchy pasta water for extra richness. Also, super easy to veganize!
Here’s what you’ll need—
– short cut pasta
– fresh sweet corn
– butter (I used dairy free)
– yellow onion & garlic
– full fat, unsweetened coconut milk
– white miso paste
– lemon juice
– basil and black pepper for serving
