Chickpea Shakshuka Breakfast Bowls 🌱✨

Starting off the week with something a little different… I wanted to share this wonderful breakfast spread inspired by theoriginaldish shakshuka with avocado salad—I mean after I saw that fried bread I have been craving it ever since.

My version is a little different, I ed a traditional shakshuka recipe from nytcooking , but replaced the eggs with a can of chickpeas! Delicious and no need to turn on the oven. Also made a quick tofu scramble to serve alongside plus fried sourdough from a local bakery. Highly recommend the combo, the smashed avo and bread are not optional. 😉

I didn’t write this one up in a blog post because you can kind of choose your own adventure on this one, but here’s my take—

– Chickpea shakshuka (traditional shakshuka red pepper sauce w/ chickpeas instead of eggs)
– tofu scramble (use your fav recipe)
– smashed avocado w/ green olives + lemon + pinch of salt
– fried sourdough
