Cajun Red Beans and Rice 🍛✨

I was planning on making a traditional jambalaya with shrimp and andouille sausage, but yesterday I was just in the mood for a good vegan meal. This recipe is super simple and has that same veggies and delicious seasoning blend as jambalaya!

I am personally not a fan of super spicy food, but if you want to add more cayenne and light your mouth on fire, go for it


• Ingredients •
1 chopped red bell pepper
1 chopped green bell pepper
1 diced yellow onion
4 cloves crushed garlic
1 cup sliced okra (optional)
1 14 oz can crushed tomatoes
2 cans red kidney beans
2 tsp paprika
1/2 tsp cayenne
1 tsp oregano
1 tsp thyme
Olive oil
Salt/pepper to taste
Scallions for garnish

Heat about a tablespoon of oil in a large skillet then add onion and a pinch of salt and sauté until translucent. Add it peppers and crushed garlic and cook for another 3 minutes or so. Pour in your spices ed by the crushed tomatoes. Add another healthy pinch of salt and bring to a boil then add in the drained and rinsed beans and simmer for 10-15 min.
Serve with rice, scallions and garnish with fresh parsley
