Tremendous easy, simply pulse a can of drained chickpeas in a meals processor (I feel a blender would work too it simply could be just a little chunkier). Throw in a clove of garlic, a number of spoonfuls of tahini, a tablespoon of lemon juice, your cooked beets and a pinch of salt. Mix till clean.
