Balsamic Lentil Ragu with Sweet Corn Polenta ✨🌱
Let me introduce you to my new favorite summertime comfort food… Lentil ragu with polenta. It’s super cozy and delicious but still has that element of freshness making it perfect for these warm summer evenings!
The lentil ragu sauce is gently simmered with all sorts of umami packed ingredients like miso and baby Bella mushrooms. The balsamic goes in at the end and adds a nice sweetness. Spooned over creamy polenta with fresh corn, a bit of honey and fruity olive oil for a hearty summer meal. Seems fancy but actually pretty simple to make, on the table in less than 45 minutes! Vegan (if u sub maple syrup for honey) and gluten free 🙂
Kind of a long ingredient list but pretty straightforward to make—
– cooked brown or green lentils
– yellow onion, carrots & celery
– tomato paste
– Italian seasoning
– dry red wine
– coconut cream
– miso paste + soy sauce
– chopped tomatoes
– balsamic vinegar
– dry grits
– olive oil
