A lighter, vegan version of a traditional Hungarian dish, this Chickpea Paprikash recipe is the coziest weeknight dinner. Canned chickpeas simmered in a rich and creamy coconut sauce with sweet paprika and tomato paste, all served over pasta noodles for a quick, satisfying meal.

Also, I recently discovered Radiatori (the type of pasta in the picture) and it is the BEST for picking up creamy sauces. 10/10 would recommend for this chickpea Paprikash.

Ready in less than 30 min and made with super simple ingredients—
– canned chickpeas
– full fat, unsweetened coconut milk
– yellow onion & garlic
– olive oil
