I have been wanting to try making chickpea cookie dough for a while now. Finally made it, and I got to say, I was a little disappointed. I mean it was fine, but the texture was kind of grainy and not very ‘dough like.’ In attempt to save my wasted can of chickpeas I added in some cocoa powder to thicken it up a bit. Turns out that was the right decision because it totally fixed the texture and replaced that beany aftertaste with a rich dark chocolate flavor. Rolled em’ into balls and I ended up with the perfect lil energy bite!
